Description

Ingredients

  • 1 medium butternut squash (about 2 lbs)
  • 1 cup whole spelt grains
  • 1 cup crumbled feta cheese
  • 2 cups low-sodium vegetable broth
  • 2 tbsp extra virgin olive oil
  • 2 tbsp fresh parsley or thyme, chopped
  • Salt and pepper to taste

Instructions

  1. Wash the butternut squash, slice it in half lengthwise, and scoop out the seeds.
  2. Rub the inside of each half with olive oil and season with salt and pepper.
  3. In a pot, bring vegetable broth to a boil, add spelt grains, reduce heat, and simmer for about 30 minutes until tender.
  4. Combine cooked spelt with feta cheese and fresh herbs; spoon into each squash half.
  5. Place both halves in a slow cooker upright with half a cup of water at the bottom. Cover and cook on low for approximately 4 hours until tender.
  6. Carefully remove from the slow cooker, let cool slightly, drizzle with extra olive oil if desired, and serve.
