- 1 ripe mango (about 1 cup diced)
- 2 tsp chili powder
- 2 tbsp honey
- 2 tbsp lime juice (freshly squeezed)
- 2 tbsp extra virgin olive oil
- 2 tbsp low-sodium soy sauce
- 3 garlic cloves (minced)
- Salt and pepper to taste
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Toss the cauliflower florets in olive oil, salt, and pepper. Spread them evenly on the baking sheet.
- In a blender, combine the mango, honey, soy sauce, chili powder, garlic, and lime juice; blend until smooth.
- Drizzle half of the glaze over the cauliflower and toss to coat. Roast for about 20 minutes until golden brown and tender.
- Remove from the oven, drizzle with remaining glaze, toss again, and serve garnished with lime wedges or cilantro.
