  • 1 medium head cauliflower (about 4 cups florets)
  • 1 ripe mango (about 1 cup diced)
  • 2 tsp chili powder
  • 2 tbsp honey
  • 2 tbsp lime juice (freshly squeezed)
  • 2 tbsp extra virgin olive oil
  • 2 tbsp low-sodium soy sauce
  • 3 garlic cloves (minced)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Toss the cauliflower florets in olive oil, salt, and pepper. Spread them evenly on the baking sheet.
  3. In a blender, combine the mango, honey, soy sauce, chili powder, garlic, and lime juice; blend until smooth.
  4. Drizzle half of the glaze over the cauliflower and toss to coat. Roast for about 20 minutes until golden brown and tender.
  5. Remove from the oven, drizzle with remaining glaze, toss again, and serve garnished with lime wedges or cilantro.
