  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup cold unsalted butter, cubed
  • 1 cup well-drained ricotta cheese
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/2 cup mini chocolate chips

Instructions

  1. Preheat your oven to 375°F (190°C). In a bowl, mix together the flour and granulated sugar. Cut in the cold butter until the mixture resembles coarse crumbs.
  2. Gradually add ice-cold water, one tablespoon at a time, until the dough comes together. Wrap in plastic wrap and refrigerate for 30 minutes.
  3. In another bowl, combine the ricotta cheese, powdered sugar, and vanilla extract until smooth. Gently fold in the mini chocolate chips.
  4. Roll out the chilled dough into a rectangle about 1/8 inch thick and transfer it to a greased baking dish. Trim any excess edges.
  5. Spread the ricotta filling evenly over the dough. Bake for 25-30 minutes or until golden brown.
  6. Allow to cool completely before cutting into squares and dusting with powdered sugar.
