  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 1 lb shrimp (peeled and deveined)
  • 8 oz fettuccine or penne pasta
  • 2 tbsp Cajun seasoning
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 1 cup bell peppers (sliced; mix of red and green)
  • 2 cloves garlic (minced)
  • 1 cup low-sodium chicken broth
  • 2 tbsp olive oil

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet over medium heat, add olive oil. Season chicken with Cajun seasoning and cook for about 6 minutes on each side until golden brown. Remove from skillet and let rest.
  3. In the same skillet, add more olive oil if needed and cook shrimp seasoned with Cajun spice until pink (about 3 minutes). Remove shrimp from pan.
  4. Add bell peppers and garlic to the skillet; sauté until fragrant. Pour in chicken broth and heavy cream, stirring to combine.
  5. Slice the chicken into bite-sized pieces and return it along with the shrimp to the skillet. Stir in cooked pasta until well coated with sauce.
  6. Serve topped with freshly grated Parmesan cheese.
