  • 4 medium sweet potatoes (about 2 lbs)
  • 1 lb lean ground turkey
  • 1 cup fresh or dried cranberries
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 cups fresh spinach, wilted
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Rinse and scrub the sweet potatoes clean; pat dry and place on a lined baking sheet.
  2. Roast sweet potatoes for 45-50 minutes until tender.
  3. In a skillet over medium heat, add olive oil and sauté onions and garlic until fragrant.
  4. Add ground turkey to the skillet; cook until browned (6-8 minutes), seasoning with salt and pepper.
  5. Stir in wilted spinach and cranberries; allow to cook for another two minutes if using dried cranberries.
  6. Slice roasted sweet potatoes lengthwise, carefully scoop out a bit of flesh if needed, then fill with the turkey-cranberry mixture.
