- 3–4 lbs beef short ribs
- 2 tbsp extra virgin olive oil
- 2 large onions, thinly sliced
- 6 cloves garlic, minced
- 1 cup dry red wine
- 1 cup diced dried apricots
- 2 tbsp capers
- 1 tbsp fresh thyme (or a few sprigs)
- Fresh parsley for garnish
Instructions
- Preheat oven to 325°F (160°C). Heat olive oil in a Dutch oven over medium-high heat.
- Season short ribs with salt and pepper, then sear in batches until browned all over. Remove and set aside.
- Sauté sliced onions until soft (about 5 minutes), add minced garlic and cook for an additional minute.
- Deglaze the pot with red wine, scraping up any browned bits; simmer until reduced by half (about 5 minutes).
- Return short ribs to the pot along with apricots, capers, thyme, and enough water or beef stock to cover slightly. Bring to a simmer.
- Cover pot and transfer to oven; braise for about 3 hours. Let sit for 10 minutes before serving.
