- 2 medium beets (about 400g), washed and trimmed
- 3 medium carrots (about 300g), peeled and cut into sticks
- 150g fresh burrata cheese
- 2 tbsp extra virgin olive oil
- 1 tbsp aged balsamic vinegar
- Fresh herbs (basil or parsley), for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Wrap the beets in aluminum foil and place them on a baking sheet. Roast for 45-60 minutes until fork-tender.
- Toss the carrot sticks with 1 tablespoon of olive oil, salt, and pepper. Spread them on another baking sheet and roast alongside the beets for 25-30 minutes until caramelized.
- Once cooled, slice the beets into wedges. In a bowl, combine roasted beets, carrots, and torn pieces of burrata.
- Drizzle with remaining olive oil and balsamic vinegar. Toss gently.
- Garnish with fresh herbs before serving.
