  • 6 oz dark chocolate (70{22f653054aea4d9729bf8eda57af9143917082454c41f87a97376fe8483a669f} cocoa or higher)
  • 2 tbsp unsalted butter (plus extra for greasing)
  • 1/2 cup granulated sugar
  • 4 large eggs (separated)
  • 1 tbsp all-purpose flour
  • 1 tsp pure vanilla extract

Instructions

  1. Preheat the oven to 375°F (190°C). Grease four ramekins with butter and dust with sugar.
  2. Melt the dark chocolate and butter in a heatproof bowl over simmering water, stirring until smooth.
  3. In another bowl, whisk egg yolks with sugar until pale; add melted chocolate and vanilla extract.
  4. In a separate bowl, beat egg whites until stiff peaks form. Gently fold half into the chocolate mixture, then fold in the remaining whites.
  5. Divide the mixture between ramekins and bake for 12-15 minutes until puffed but slightly soft in the center.
  6. Serve immediately, optionally dusted with powdered sugar or fresh berries.
