- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted

- 1 cup full-fat sour cream
- 2 large eggs
- 1 tbsp lemon juice
- Zest of 1 lemon
- 1 cup fresh raspberries
Instructions
- Preheat the oven to 350°F (175°C). In a bowl, mix graham cracker crumbs, melted butter, and ¼ cup sugar until combined. Press into the bottom of a springform pan.
- In another bowl, beat cream cheese until smooth. Gradually add remaining sugar and blend in sour cream, eggs, lemon juice, and zest until creamy.
- In a saucepan over medium heat, cook raspberries with 1 tablespoon sugar until they soften into a sauce. Let cool slightly.
- Pour half of the cheesecake mixture over the crust. Drizzle with half the raspberry sauce and swirl gently. Repeat layers.
- Bake for 55-60 minutes until set but jiggly in the center. Turn off the oven and leave cheesecake inside for an hour.
- Cool at room temperature before refrigerating for at least four hours or overnight. Serve chilled with extra raspberry sauce.
