  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar, divided
  • 16 oz cream cheese, softened
  • 1 cup full-fat sour cream
  • 2 large eggs
  • 1 tbsp lemon juice
  • Zest of 1 lemon
  • 1 cup fresh raspberries

Instructions

  1. Preheat the oven to 350°F (175°C). In a bowl, mix graham cracker crumbs, melted butter, and ¼ cup sugar until combined. Press into the bottom of a springform pan.
  2. In another bowl, beat cream cheese until smooth. Gradually add remaining sugar and blend in sour cream, eggs, lemon juice, and zest until creamy.
  3. In a saucepan over medium heat, cook raspberries with 1 tablespoon sugar until they soften into a sauce. Let cool slightly.
  4. Pour half of the cheesecake mixture over the crust. Drizzle with half the raspberry sauce and swirl gently. Repeat layers.
  5. Bake for 55-60 minutes until set but jiggly in the center. Turn off the oven and leave cheesecake inside for an hour.
  6. Cool at room temperature before refrigerating for at least four hours or overnight. Serve chilled with extra raspberry sauce.
