  • 8 oz fettuccine pasta
  • 2 medium-sized beets (about 8 oz)
  • 1/2 cup slivered almonds
  • 2 cloves garlic, minced
  • 2 tbsp extra virgin olive oil
  • 1/4 cup freshly grated Parmesan cheese (optional)
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Wrap each beet in aluminum foil and roast on a baking sheet for 45-60 minutes until tender. Allow them to cool before peeling.
  2. In a large pot, boil salted water and cook the fettuccine according to package instructions until al dente, about 8-10 minutes.
  3. In a skillet over medium heat, warm olive oil. Add minced garlic and slivered almonds, sautéing until fragrant and golden brown (4-5 minutes).
  4. Drain the cooked fettuccine and return it to the pot. Mix in the roasted beets (sliced), sautéed garlic with almonds, lemon juice, salt, and pepper. Toss gently to combine.
  5. Serve topped with freshly grated Parmesan cheese and additional toasted almonds if desired.
