  • 34 boneless skinless chicken breasts (about 1.5 lbs)
  • 2 chipotle peppers in adobo sauce, chopped
  • 1 cup light lager or pale ale
  • 2 tbsp brown sugar
  • 4 ears fresh corn on the cob
  • 1 cup ketchup
  • 2 tbsp lime juice
  • 4 oz cream cheese
  • 2 tbsp butter
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high heat (375°F/190°C) and oil the grates.
  2. In a bowl, mix chopped chipotle peppers, beer, brown sugar, ketchup, and lime juice. Add chicken and marinate for at least one hour.
  3. Grill the marinated chicken for 6-8 minutes on each side until cooked through (internal temp of 165°F).
  4. Grill husked corn for about 10 minutes until charred; cut kernels into a bowl.
  5. Combine corn with cream cheese, butter, salt, and pepper.
  6. Baste grilled chicken with leftover marinade in the last few minutes of cooking.
