- 1 lb boneless, skinless chicken breasts (about 3 breasts)
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 cup bell peppers, diced (red or yellow)
- 10 empanada dough discs (store-bought)
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- 2 cups oil for frying
Instructions
- Preheat oven to 400°F (200°C). Season chicken with salt and pepper and bake for 25–30 minutes until cooked through.
- In a frying pan, heat oil over medium heat. Sauté onions and bell peppers for about five minutes until soft.
- Shred the cooked chicken and mix it with sautéed vegetables, garlic, spices, salt, and pepper in a bowl.
- Place two tablespoons of filling on each dough disc. Moisten edges with water; fold over and seal with a fork.
- Heat oil in a pot over medium-high heat until shimmering. Fry empanadas in batches for about three minutes per side until golden brown. Drain on paper towels.
