  • 1 lb boneless, skinless chicken breasts (about 3 breasts)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup bell peppers, diced (red or yellow)
  • 10 empanada dough discs (store-bought)
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 cups oil for frying

Instructions

  1. Preheat oven to 400°F (200°C). Season chicken with salt and pepper and bake for 25–30 minutes until cooked through.
  2. In a frying pan, heat oil over medium heat. Sauté onions and bell peppers for about five minutes until soft.
  3. Shred the cooked chicken and mix it with sautéed vegetables, garlic, spices, salt, and pepper in a bowl.
  4. Place two tablespoons of filling on each dough disc. Moisten edges with water; fold over and seal with a fork.
  5. Heat oil in a pot over medium-high heat until shimmering. Fry empanadas in batches for about three minutes per side until golden brown. Drain on paper towels.
