Instructions
- Season the beef chuck roast generously with salt and pepper. In a skillet over medium-high heat, sear the roast on all sides until browned (about 3 minutes per side).
- Transfer the seared roast to a slow cooker. Add sliced onions, minced garlic, and enough beef broth to cover two-thirds of the meat. Stir in Worcestershire sauce.
- Cover and cook on low for 8 hours or until the meat is fork-tender.
- Remove the roast and let it rest for 10 minutes before shredding with forks.
- Slice hoagie rolls lengthwise and fill each with shredded beef and Swiss cheese. Optionally broil for 2 minutes until cheese is bubbly.
