  • 3 lbs beef chuck roast
  • 4 cups low-sodium beef broth
  • 1 large onion, sliced
  • 4 garlic cloves, minced
  • 6 hoagie rolls
  • 6 slices Swiss cheese
  • 2 tbsp Worcestershire sauce
  • Salt and pepper to taste

Instructions

  1. Season the beef chuck roast generously with salt and pepper. In a skillet over medium-high heat, sear the roast on all sides until browned (about 3 minutes per side).
  2. Transfer the seared roast to a slow cooker. Add sliced onions, minced garlic, and enough beef broth to cover two-thirds of the meat. Stir in Worcestershire sauce.
  3. Cover and cook on low for 8 hours or until the meat is fork-tender.
  4. Remove the roast and let it rest for 10 minutes before shredding with forks.
  5. Slice hoagie rolls lengthwise and fill each with shredded beef and Swiss cheese. Optionally broil for 2 minutes until cheese is bubbly.
