  • 4 large eggs
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Grease a muffin tin with nonstick cooking spray.
  3. In a bowl, combine thawed hash browns with salt and pepper. Press about two tablespoons of the mixture into each muffin cup to form nests.
  4. Bake for 20 minutes until golden brown and crispy.
  5. Remove from the oven and crack an egg into each hash brown nest. Top with cheese and green onions.
  6. Return to the oven for another 10-12 minutes until eggs are set to your liking.
