- 1 cup whole milk
- 1/2 cup granulated sugar
- 3 gelatin sheets (or 1 tablespoon powdered gelatin)

- 4 ripe plums, halved and pitted
- 1 tablespoon balsamic vinegar
- 2 tablespoons brown sugar
Instructions
- Soak gelatin sheets in cold water for 5 minutes.
- In a saucepan, heat heavy cream, whole milk, and granulated sugar over medium heat until warm (3-5 minutes), stirring occasionally.
- Add fresh herbs and steep for 10 minutes; strain out herbs.
- Squeeze excess water from gelatin and stir into the warm mixture until dissolved.
- Pour into serving cups or molds and refrigerate for at least 4 hours (overnight preferred).
- Preheat oven to 375°F (190°C). Place plum halves cut-side up on a baking sheet, sprinkle with brown sugar and balsamic vinegar, then roast for about 20 minutes until tender.
- Serve panna cotta topped with roasted plums.
