Ingredients

  • 1 cup heavy cream
  • 1 cup whole milk
  • 1/2 cup granulated sugar
  • 3 gelatin sheets (or 1 tablespoon powdered gelatin)
  • 2 tablespoons fresh herbs (basil or mint)
  • 4 ripe plums, halved and pitted
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons brown sugar

Instructions

  1. Soak gelatin sheets in cold water for 5 minutes.
  2. In a saucepan, heat heavy cream, whole milk, and granulated sugar over medium heat until warm (3-5 minutes), stirring occasionally.
  3. Add fresh herbs and steep for 10 minutes; strain out herbs.
  4. Squeeze excess water from gelatin and stir into the warm mixture until dissolved.
  5. Pour into serving cups or molds and refrigerate for at least 4 hours (overnight preferred).
  6. Preheat oven to 375°F (190°C). Place plum halves cut-side up on a baking sheet, sprinkle with brown sugar and balsamic vinegar, then roast for about 20 minutes until tender.
  7. Serve panna cotta topped with roasted plums.
