- 1 medium onion
- 4 tbsp unsalted butter (divided)
- 1 sheet puff pastry (thawed)
- Salt and pepper to taste
Instructions
- Peel and cube the potatoes, then boil in salted water for 15-20 minutes until fork-tender.
- In a skillet, melt 2 tbsp of butter over medium heat. Sauté the chopped onion until caramelized, about 8-10 minutes.
- Drain the cooked potatoes and return them to the pot. Add sautéed onions, remaining butter, salt, and pepper; mash until smooth.
- Preheat your oven to 400°F (200°C). Roll out the puff pastry on a floured surface to about an eighth-inch thick.
- Cut the pastry into four-inch squares, place a spoonful of potato filling in the center of each square, fold over, and seal edges with a fork.
- Arrange on a baking sheet lined with parchment paper, brush tops with remaining melted butter, and bake for 20-25 minutes until golden brown.
