Ingredients

Scale
  • 1 cup fine semolina
  • 1 cup granulated sugar
  • 1 cup plain yogurt (preferably Greek)
  • 3 large eggs
  • 2 tsp baking powder
  • Zest of 1 lemon
  • 1 cup water (for syrup)
  • 1 tsp rose water (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a rectangular baking dish.
  2. In a large bowl, mix semolina, sugar, baking powder, and lemon zest until well combined.
  3. In another bowl, whisk together yogurt and eggs until smooth. Gradually add this mixture to the dry ingredients, stirring gently.
  4. Pour the batter into the prepared dish and bake for 30-35 minutes or until golden brown.
  5. While the cake bakes, prepare the syrup by boiling water and sugar for about 10 minutes; add lemon juice and rose water if using.
  6. Once baked, pour warm syrup over the cake and let it soak for at least an hour before serving.
