- In a bowl, whisk together eggs and remaining sugar until combined. Gradually mix in milk, cream, and vanilla extract until smooth.
- Pour the custard mixture over the caramel in ramekins, leaving space at the top.
- Preheat your sous vide water bath to 176°F (80°C). Submerge ramekins in the water bath and cook for 1 hour.
- Once cooked, cool at room temperature before refrigerating for at least 4 hours or overnight.
