Ingredients

  • 2 cups all-purpose flour
  • 2 large eggs
  • 1 cup fresh beets, roasted and pureed
  • 1 cup shiitake or cremini mushrooms, chopped
  • 1 cup ricotta cheese, well-drained
  • ½ cup freshly grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • 2 tsp olive oil, for sautéing

Instructions

  1. Preheat the oven to 400°F (200°C). Wrap beets in foil and roast for about 45 minutes until tender. Let cool, then peel and puree.
  2. In a mixing bowl, combine flour and a pinch of salt. Create a well in the center, add eggs and beet puree, then mix until a dough forms.
  3. Knead on a floured surface for about 5-7 minutes until smooth. Cover and let rest for 30 minutes.
  4. For the filling, sauté mushrooms and garlic in olive oil until golden brown. Mix with ricotta, Parmesan, salt, and pepper.
  5. Roll out the rested dough thinly and cut into squares or circles. Place small dollops of filling on half of each piece; fold over and seal edges tightly.
  6. Bring salted water to a boil. Cook tortellini for about 3 minutes until they float. Serve with olive oil or sauce.
