  • 9 lasagna noodles (traditional or no-boil)
  • 15 oz whole milk ricotta cheese
  • 2 cups fresh spinach
  • 1 medium zucchini, sliced thinly
  • 1 medium red bell pepper, diced
  • 1 medium yellow bell pepper, diced
  • 8 oz mushrooms, sliced
  • 2 cups marinara sauce
  • 2 cups shredded mozzarella cheese

Instructions

  1. Preheat oven to 375°F (190°C) and spray a large baking dish with nonstick cooking spray.
  2. In a skillet over medium heat, sauté mushrooms until golden brown. Add zucchini and bell peppers; cook until softened. Stir in spinach until wilted.
  3. In a bowl, mix ricotta cheese with salt and pepper until smooth.
  4. Spread marinara sauce on the bottom of the baking dish. Layer noodles, half of the ricotta mixture, half of the sautéed vegetables, and sprinkle mozzarella cheese. Repeat layers until ingredients are used up.
  5. Finish with marinara sauce and top with mozzarella cheese.
  6. Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 15 minutes until bubbly and golden brown.
