  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ½ cup granulated sugar (plus ¾ cup for filling)
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • ¼ cup fresh lemon juice
  • ¼ cup fresh lime juice
  • 1 cup cherries (fresh or frozen), pitted and halved
  • ½ cup pistachios, chopped

Instructions

  1. Preheat oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, melted butter, and ½ cup sugar. Press into the bottom of a springform pan.
  2. In a large bowl, beat cream cheese until smooth. Gradually add sour cream, lemon juice, lime juice, and remaining sugar until blended.
  3. Fold in cherries and pistachios gently.
  4. Pour filling over the crust and bake for 50-60 minutes until set but slightly jiggly in the center.
  5. Cool at room temperature before refrigerating for at least four hours or overnight.
  6. Serve chilled with extra cherries or whipped cream if desired.
