  • 1 ½ lbs ground beef (80/20)
  • 2 medium sweet yellow onions, chopped
  • 3 cloves garlic, minced
  • 2 large eggs
  • 1 cup breadcrumbs (plain or seasoned)
  • ½ cup beef broth
  • 1 cup Swiss cheese, shredded
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 2 tbsp olive oil for sautéing

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a skillet, heat olive oil over medium heat, then sauté chopped onions for about 10-15 minutes until golden brown.
  3. In a large bowl, mix ground beef, sautéed onions (cooled), minced garlic, eggs, breadcrumbs, thyme, oregano, salt, and pepper until just combined.
  4. Shape the mixture into a loaf in the prepared pan.
  5. Bake for about 60 minutes or until an internal temperature of 160°F is reached. During the last few minutes of baking, sprinkle Swiss cheese on top and return it to the oven until melted.
  6. Let rest for 10 minutes before slicing and serving.
