  • 1.5 lbs boneless chicken thighs
  • 1 cup brined green olives, pitted
  • 1 large sweet onion, diced
  • 4 cloves garlic, minced
  • 2 cups low-sodium chicken broth
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 2 tsp paprika
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Prepare your ingredients by dicing the onion and mincing the garlic.
  2. In a large pot over medium heat, heat olive oil. Season chicken thighs with salt and pepper, then sear until golden brown (about 5 minutes per side). Remove from pot.
  3. In the same pot, sauté onions until soft (about 3 minutes), then add minced garlic for another minute.
  4. Return chicken to the pot along with green olives. Pour in chicken broth and sprinkle with cumin, coriander, paprika, salt, and pepper. Stir well.
  5. Bring to a gentle simmer, cover, and cook on low heat for about 30 minutes until chicken is tender.
  6. Garnish with fresh cilantro before serving with couscous or bread.
