Ingredients
- 12 oz farfalle pasta
- 2 medium fresh beets (roasted) or 1 can (15 oz) of beets (drained)
- 1 cup heavy cream
- 3 cloves garlic (minced)
- ½ cup grated Parmesan cheese
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Cook the farfalle pasta according to package instructions in salted boiling water until al dente. Reserve 1 cup of pasta water before draining.
- If using fresh beets, roast them at 400°F (200°C) for about 45 minutes until tender. Peel and chop; if using canned beets, simply chop them.
- In a skillet over medium heat, heat olive oil and sauté minced garlic until fragrant.
- Add chopped beets and heavy cream to the skillet; cook for about 5 minutes until heated through.
- Blend the mixture until smooth, adding reserved pasta water as needed for desired consistency.
- Toss the drained farfalle with the beet sauce until evenly coated. Serve garnished with extra Parmesan cheese and cracked black pepper.
