  • 2 cups cherry tomatoes, halved
  • 8 ounces fresh burrata cheese
  • 3 tablespoons extra virgin olive oil
  • 1/4 cup fresh basil leaves
  • Sea salt, to taste
  • Black pepper, to taste

Instructions

  1. Rinse asparagus under cold water and snap off woody ends. Blanch in boiling salted water for 2 minutes until bright green but still crisp. Transfer to an ice bath to cool.
  2. Halve cherry tomatoes and set aside.
  3. Drain burrata cheese; slice into thick rounds or tear apart.
  4. In a large bowl, combine cooled asparagus and halved tomatoes. Drizzle with olive oil; season with salt and pepper.
  5. Top with burrata pieces and tear fresh basil over the salad.
  6. Gently toss to combine without squishing the burrata too much; serve immediately.
