Instructions
- Preheat your oven to 375°F (190°C).
- Peel the pears, halve them, and remove the cores.
- In a saucepan over medium heat, combine red wine, 1/2 cup sugar, and vanilla extract. Add pear halves and simmer for about 15 minutes until tender but still firm.
- Remove pears and let cool slightly, reserving the poaching liquid.
- In an ovenproof skillet over medium heat, melt butter with remaining sugar until bubbly. Arrange pears cut-side down in the caramel.
- Roll out puff pastry over the caramelized pears and trim excess edges.
- Bake for about 25-30 minutes until golden brown. Cool briefly before flipping onto a serving plate.
