  • 1/2 cup celery chopped
  • 1/4 cup red onion finely chopped
  • 1/4 cup parsley chopped
Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon honey optional

Method
 

Preparation
  1. In a mixing bowl, combine chickpeas, diced apple, chopped celery, red onion, and parsley.
  2. In a separate bowl, whisk together olive oil, lemon juice, honey, salt, and pepper.
  3. Pour the dressing over the salad and toss to combine.
  4. Serve immediately or chill in the refrigerator for 30 minutes before serving.
