Method
Prepare the Herb Mixture
- Blend the cilantro, parsley, garlic, and jalapeño with a little vegetable broth until smooth.
Cook the Rice
- In a pot, heat olive oil over medium heat. Add the rice and sauté for a few minutes.
- Add the remaining vegetable broth and the blended herb mixture to the pot. Stir well.
- Bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes or until rice is cooked.
