Ingredients
  

Rice Base
  • 1 cup long-grain rice
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
Herb Mixture
  • 1 cup fresh cilantro
  • 1 cup fresh parsley
  • 1 clove garlic minced
  • 1 jalapeño jalapeño pepper seeded and chopped

Method
 

Prepare the Herb Mixture
  1. Blend the cilantro, parsley, garlic, and jalapeño with a little vegetable broth until smooth.
Cook the Rice
  1. In a pot, heat olive oil over medium heat. Add the rice and sauté for a few minutes.
  2. Add the remaining vegetable broth and the blended herb mixture to the pot. Stir well.
  3. Bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes or until rice is cooked.
