Ingredients
  

Salad Base
  • 2 cups cooked chicken, shredded
  • 4 cups mixed greens
  • 1 cup carrots, shredded
  • 1 cup cucumber, sliced
  • 1 cup red bell pepper, sliced
  • 1/4 cup green onions, chopped
Dressing
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon honey
  • 1 clove garlic, minced
  • 1 teaspoon ginger, minced

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the mixed greens, shredded chicken, carrots, cucumber, red bell pepper, and green onions.
  2. In a separate bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey, garlic, and ginger to make the dressing.
  3. Pour the dressing over the salad and toss to combine.
  4. Serve immediately or chill in the refrigerator for 30 minutes before serving.
