Ingredients
  

Chicken and Sauce
  • 1 lb Chicken breast cut into bite-sized pieces
  • 1 can Coconut milk
  • 2 tbsp Red curry paste
  • 1 cup Basil leaves fresh
  • 1 tbsp Fish sauce
  • 1 tbsp Sugar
Vegetables
  • 1 cup Bell pepper sliced
  • 1 cup Zucchini sliced
  • 1 cup Carrots sliced

Method
 

Cooking the Curry
  1. Heat the skillet over medium heat and add the chicken pieces. Cook until browned.
  2. Add the red curry paste and stir for 1 minute.
  3. Pour in the coconut milk and bring to a simmer.
  4. Add the vegetables and cook until tender.
  5. Stir in the fish sauce, sugar, and basil leaves just before serving.
