- In a saucepan, combine the chopped tomatoes, onion, garlic, and ginger. Cook over medium heat until the tomatoes are soft.
- Add brown sugar, vinegar, salt, cumin, coriander, and chili powder. Stir well and let it simmer for 20 minutes.
- Remove from heat and allow to cool slightly. Blend until smooth.
- Transfer to a jar and refrigerate. Serve with your favorite dishes.
