  • 4 large flour tortillas
  • 1 cup shredded cheese cheddar or your choice
  • 4 large eggs
  • 1 cup cooked sausage crumbled
  • 1 tablespoon oil for cooking

Method
 

Cooking Instructions
  1. Heat oil in a skillet over medium heat.
  2. Scramble the eggs in the skillet until cooked.
  3. Add cooked sausage and mix well.
  4. Place a tortilla in the skillet, add cheese and the egg mixture, then top with another tortilla.
  5. Cook until the bottom tortilla is golden brown, then flip and cook the other side.
  6. Remove from skillet, slice, and serve warm.
