Ingredients
  

Topping
  • 200 grams Broad beans Fresh or frozen
  • 100 grams Goats' cheese Crumbled
  • 2 tablespoons Olive oil Extra virgin
  • 1 tablespoon Lemon juice
  • Salt To taste
  • Pepper To taste
Base
  • 4 slices Bread Sourdough or ciabatta

Method
 

Prepare the topping
  1. If using fresh broad beans, blanch them in boiling water for 2-3 minutes, then cool in ice water. If using frozen, simply thaw them.
  2. In a mixing bowl, combine the broad beans, crumbled goats' cheese, olive oil, lemon juice, salt, and pepper. Mix gently.
Prepare the base
  1. Grill the bread slices until golden brown on both sides.
Assemble the bruschetta
  1. Top each slice of grilled bread with the broad bean and goats' cheese mixture.
  2. Serve immediately and enjoy!
