Ingredients
  

Pasta and Vegetables
  • 1 cup Orzo pasta
  • 2 cups Broccoli florets
  • 1 can White beans drained and rinsed
  • 1 lemon Juice and zest
  • 1/2 cup Parmesan cheese grated
  • 2 tablespoons Olive oil
  • Salt to taste
  • Pepper to taste

Method
 

Cooking the Orzo and Broccoli
  1. Bring a pot of salted water to a boil and cook the orzo according to package instructions.
  2. Add the broccoli florets to the pot during the last 2 minutes of cooking.
  3. Drain the orzo and broccoli in a colander.
Combining Ingredients
  1. In a skillet, heat olive oil over medium heat.
  2. Add the drained white beans, lemon juice, and zest, and cook for a few minutes.
  3. Stir in the orzo and broccoli, and mix well.
  4. Add grated Parmesan cheese and season with salt and pepper to taste.
