  • 2 cups bell peppers sliced
  • 1 cup red onion sliced
  • 1 cup asparagus trimmed
Dressing
  • 1 tablespoon olive oil for grilling
  • 1 tablespoon lemon juice freshly squeezed
  • 1 teaspoon salt
  • 1 teaspoon black pepper
Topping
  • 1 cup ricotta cheese
  • 1 lemon lemon charred

Method
 

Grilling Vegetables

  3. Place the vegetables on the grill and cook for 10-15 minutes, turning occasionally until charred and tender.
Preparing Topping

  2. Char the lemon halves on the grill for 2-3 minutes until marked.
Serving
