  • 4 pieces chicken thighs boneless, skinless
  • 1 cup red wine preferably Burgundy
  • 2 cups mushrooms sliced
  • 2 pieces carrots sliced
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 2 tablespoons olive oil
  • 1 teaspoon thyme dried

Method
 

Cooking Steps
  1. Heat olive oil in a Dutch oven over medium heat. Add chicken thighs and brown on all sides.
  2. Remove chicken and set aside. In the same pot, add onions, carrots, and garlic. Sauté until softened.
  3. Add mushrooms and cook until browned.
  4. Return chicken to the pot. Pour in red wine and add thyme and bay leaf.
  5. Bring to a simmer, cover, and cook for about 45 minutes until chicken is tender.
  6. Season with salt and pepper before serving.
