Cooking Steps
- Heat olive oil in a Dutch oven over medium heat. Add chicken thighs and brown on all sides.
- Remove chicken and set aside. In the same pot, add onions, carrots, and garlic. Sauté until softened.
- Add mushrooms and cook until browned.
- Return chicken to the pot. Pour in red wine and add thyme and bay leaf.
- Bring to a simmer, cover, and cook for about 45 minutes until chicken is tender.
- Season with salt and pepper before serving.
