Prepare Spaghetti Squash
- Preheat the oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds.
- Drizzle olive oil and sprinkle salt on the cut sides of the squash. Place cut-side down in a baking dish.
- Bake for 30-40 minutes until tender. Use a fork to scrape out the strands.
Make Alfredo Sauce
- In a skillet, melt butter over medium heat. Add minced garlic and sauté until fragrant.
- Pour in heavy cream and bring to a simmer. Stir in Parmesan cheese, salt, and pepper until smooth.
Combine and Serve
- Add shredded chicken to the Alfredo sauce and stir to combine.
- Serve the sauce over the spaghetti squash strands.
