Ingredients
  

Crepes
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup milk
  • 1 tablespoon butter melted
  • 1 pinch salt
Filling
  • 2 cups cooked chicken shredded
  • 1 cup cheese shredded
  • 1 cup spinach cooked
  • 1 tablespoon olive oil
  • 1 teaspoon garlic minced
  • 1 teaspoon onion chopped
  • 1 teaspoon pepper

Method
 

Make the Crepes
  1. In a mixing bowl, whisk together the flour, eggs, milk, melted butter, and salt until smooth.
  2. Heat a crepe pan over medium heat and pour in a small amount of batter, swirling to coat the pan.
  3. Cook for 1-2 minutes until the edges lift, then flip and cook for another minute.
  4. Repeat until all batter is used.
Prepare the Filling
  1. In a skillet, heat olive oil over medium heat and sauté garlic and onion until translucent.
  2. Add shredded chicken, spinach, cheese, and pepper, stirring until heated through.
Assemble the Crepe Pockets
  1. Place a portion of the filling in the center of each crepe and fold the sides over to form a pocket.
  2. Serve warm.
