Ingredients
  

Chicken Skewers
  • 1 pound chicken breast cut into cubes
  • 2 tablespoons olive oil for marinating
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 teaspoon black pepper
Lemon-Roasted Potatoes
  • 2 pounds baby potatoes halved
  • 2 tablespoons olive oil
  • 1 lemon juice
  • 1 teaspoon salt
  • 1 teaspoon black pepper
Whipped Feta
  • 8 ounces feta cheese crumbled
  • 1 tablespoon olive oil
  • 2 tablespoons water to adjust consistency

Method
 

Prepare Chicken Skewers
  1. In a mixing bowl, combine chicken cubes, olive oil, garlic powder, paprika, salt, and black pepper. Mix well and let marinate for at least 15 minutes.
  2. Thread marinated chicken onto skewers.
Prepare Lemon-Roasted Potatoes
  1. Preheat the oven to 400°F (200°C).
  2. In a baking sheet, toss halved baby potatoes with olive oil, lemon juice, salt, and black pepper.
  3. Roast in the oven for 25-30 minutes or until golden brown and tender.
Make Whipped Feta
  1. In a mixing bowl, combine crumbled feta cheese, olive oil, and water. Blend until smooth and creamy.
Grill Chicken Skewers
  1. Preheat the grill to medium-high heat. Grill the chicken skewers for about 10-12 minutes, turning occasionally, until fully cooked.
Serve
  1. Serve the grilled chicken skewers with lemon-roasted potatoes and a side of whipped feta.
