Ingredients
  

Chicken Marinade
  • 4 pieces Chicken Breasts boneless and skinless
  • 2 tablespoons Chipotle Sauce adjust to taste
  • 1 teaspoon Cumin
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Salt
  • 1 tablespoon Olive Oil
Salsa
  • 2 cups Tomatoes diced
  • 1/2 cup Onion finely chopped
  • 1 tablespoon Cilantro chopped
  • 1 tablespoon Lime Juice freshly squeezed
  • 1 teaspoon Salt

Method
 

Prepare the Chicken
  1. In a mixing bowl, combine chipotle sauce, cumin, garlic powder, salt, and olive oil. Add chicken breasts and marinate for at least 30 minutes.
  2. Preheat the grill to medium-high heat.
  3. Grill the marinated chicken for about 6-7 minutes on each side or until fully cooked.
Make the Salsa
  1. In a separate bowl, mix together diced tomatoes, onion, cilantro, lime juice, and salt.
  2. Let the salsa sit for 10 minutes to allow flavors to meld.
Serve
  1. Slice the grilled chicken and serve it topped with fresh salsa.
