Chocolate Candied Bacon Ice Cream

Ingredients
  

Ice Cream Base
  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1 tablespoon vanilla extract
  • 4 large egg yolks
Candied Bacon
  • 8 slices bacon
  • 1/2 cup brown sugar
  • 1 teaspoon black pepper
Chocolate
  • 1 cup chocolate chips melted

Method
 

Prepare the Candied Bacon
  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, mix brown sugar and black pepper. Coat bacon slices with the mixture.
  3. Place bacon on the baking sheet and bake for 20 minutes or until crispy.
  4. Let the bacon cool and chop into small pieces.
Make the Ice Cream Base
  1. In a saucepan, combine heavy cream, whole milk, and sugar. Heat until sugar dissolves.
  2. In a mixing bowl, whisk egg yolks. Gradually add the warm cream mixture to the yolks, whisking constantly.
  3. Return the mixture to the saucepan and cook over low heat until thickened.
  4. Remove from heat and stir in vanilla extract and melted chocolate.
Churn the Ice Cream
  1. Pour the ice cream base into an ice cream maker and churn according to manufacturer's instructions.
  2. During the last few minutes of churning, add the chopped candied bacon.
  3. Transfer the ice cream to a container and freeze until firm.
