Prepare Dates
  1. Slice the medjool dates lengthwise and remove the pit.
  2. Fill each date with peanut butter.
Melt Chocolate
  1. In a microwave-safe bowl, combine dark chocolate chips and coconut oil.
  2. Microwave in 30-second intervals, stirring until smooth.
Coat Dates
  1. Dip each stuffed date into the melted chocolate, ensuring it is fully coated.
  2. Place the coated dates on a baking sheet lined with parchment paper.
Chill
  1. Refrigerate the dates for about 30 minutes until the chocolate hardens.
