Classic Green Beans Almondine

  • 1 pound green beans trimmed
Nuts
  • 1/2 cup sliced almonds toasted
Fats
  • 2 tablespoons butter unsalted
Seasoning
  • 1 teaspoon lemon juice
  • to taste salt
  • to taste pepper

Method
 

Preparation
  1. Bring a pot of salted water to a boil and blanch the green beans for 3-4 minutes until bright green.
  2. Drain the green beans and immediately transfer them to an ice bath to stop the cooking process.
  3. In a skillet, melt the butter over medium heat and add the toasted almonds, cooking until golden brown.
  4. Add the blanched green beans to the skillet and toss to coat with the butter and almonds.
  5. Drizzle with lemon juice and season with salt and pepper to taste.
  6. Serve immediately.
