  • 4 cups chopped salad greens
  • 1 cup diced tomatoes
  • 4 slices cooked bacon crumbled
  • 1 cup cooked chicken diced
  • 2 large hard-boiled eggs sliced
  • 1 avocado sliced
  • 1/2 cup blue cheese crumbled
Dressing
  • 1 tablespoon olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon Dijon mustard
  • to taste salt
  • to taste pepper

Method
 

Assembling the Salad
  1. In a large salad bowl, layer the salad greens, followed by the tomatoes, bacon, chicken, eggs, avocado, and blue cheese.
  2. In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and pepper to make the dressing.
  3. Drizzle the dressing over the salad and toss gently to combine.
