Ingredients
  

Couscous Base
  • 1 cup couscous
  • 1 cup vegetable broth
Vegetables
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 cup bell pepper, diced
  • 1/4 cup red onion, finely chopped
Herbs and Seasoning
  • 1/4 cup parsley, chopped
  • 1 lemon juice of
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

Preparation
  1. In a mixing bowl, combine couscous and vegetable broth. Let it sit for 5 minutes to absorb the liquid.
  2. Fluff the couscous with a fork and add the cherry tomatoes, cucumber, bell pepper, and red onion.
  3. Add parsley, lemon juice, olive oil, salt, and black pepper. Toss everything together until well combined.
