Ingredients
  

Soup Base
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 carrots carrots, diced
  • 3 stalks celery, diced
  • 6 cups vegetable broth
  • 1 can chickpeas, drained and rinsed
  • 1 cup egg noodles
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups spinach, fresh

Method
 

Cooking Instructions
  1. In a large pot, heat olive oil over medium heat. Add diced onion and cook until translucent.
  2. Add minced garlic, diced carrots, and diced celery. Cook for about 5 minutes until vegetables are tender.
  3. Pour in vegetable broth and bring to a boil.
  4. Add chickpeas, egg noodles, thyme, salt, and black pepper. Reduce heat and simmer for 10 minutes.
  5. Stir in fresh spinach and cook until wilted.
  6. Serve hot and enjoy!
