  • 1 cup bell peppers sliced
  • 1 cup onion chopped
  • 2 cloves garlic minced
  • 1 can diced tomatoes with juice
  • 2 teaspoons paprika
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil

Method
 

Cooking Steps
  1. Heat olive oil in a skillet over medium heat.
  2. Add chicken thighs and cook until browned on both sides.
  3. Remove chicken and set aside.
  4. In the same skillet, add onions, bell peppers, and garlic; sauté until soft.
  5. Stir in diced tomatoes, paprika, salt, and pepper.
  6. Return chicken to the skillet, cover, and simmer for 20 minutes.
  7. Serve hot.
