Method
Prepare the crust
- Crush the digestive biscuits and mix with melted butter. Press into the bottom of a springform pan.
Make the filling
- In a mixing bowl, beat the cream cheese and powdered sugar until smooth. Fold in the whipped cream and vanilla extract.
Assemble the cheesecake
- Spread the filling over the crust and refrigerate for at least 4 hours or until set.
Serve
- Top with sliced strawberries and crushed meringue before serving.
