Ingredients
  

Quinoa Base
  • 1 cup Quinoa Rinsed
  • 2 cups Vegetable Broth
  • 1 cup Mixed Vegetables Chopped
Fried Halloumi
  • 8 oz Halloumi Cheese Sliced
  • 2 tbsp Olive Oil For frying

Method
 

Prepare Quinoa
  1. Rinse quinoa under cold water and drain.
  2. In a pot, combine quinoa and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes.
  3. Fluff quinoa with a fork and stir in mixed vegetables.
Fry Halloumi
  1. Heat olive oil in a frying pan over medium heat.
  2. Add halloumi slices and fry until golden brown on both sides, about 3-4 minutes per side.
Assemble Bowl
  1. Serve quinoa mixture in bowls and top with fried halloumi.
  2. Drizzle with additional olive oil if desired.
