Ingredients
  

Shrimp
  • 1 pound shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 teaspoon black pepper
Mofongo
  • 3 green plantains peeled and cut into chunks
  • 2 cloves garlic minced
  • 1 cup chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon salt

Method
 

Prepare the Mofongo
  1. Boil the plantains in salted water until tender, about 15 minutes.
  2. Drain and mash the plantains with garlic, olive oil, and chicken broth until smooth.
  3. Shape the mixture into a bowl or mound.
Cook the Shrimp
  1. In a skillet, heat olive oil over medium heat.
  2. Add garlic and sauté until fragrant.
  3. Add shrimp, paprika, salt, and pepper; cook until shrimp are pink and cooked through.
Serve
  1. Serve the garlic shrimp over the mofongo.

Notes

For added flavor, you can include chicharrón (crispy pork skin) in the mofongo mixture.
